How to Make Saag Paneer

Saag Paneer is a popular North Indian dish where paneer (Indian cottage cheese) is cooked in a flavorful spinach and mustard greens puree. Here’s a simple recipe to make Saag Paneer at home:

Ingredients:

– 250g paneer, cubed
– 500g spinach leaves, washed and chopped
– 250g mustard greens (optional), washed and chopped
– 1 large onion, finely chopped
– 2 tomatoes, chopped
– 2 green chilies, chopped (adjust to taste)
– 1 tablespoon ginger-garlic paste
– 1/2 teaspoon cumin seeds
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder (adjust to taste)
– 1 teaspoon coriander powder
– 1/2 teaspoon garam masala powder
– 2 tablespoons oil or ghee
– Salt to taste
– 1/2 cup fresh cream (optional, for a creamier texture)
– Fresh coriander leaves for garnish

 Instructions:

1. Blanch the Greens:
– Boil water in a large pot. Add the chopped spinach and mustard greens (if using) to the boiling water for 2-3 minutes until wilted.
– Drain the greens and immediately transfer them to a bowl of ice-cold water to retain the vibrant green color.
– Drain again and blend the blanched greens into a smooth puree. Set aside.

2. Prepare the Paneer:
– Heat 1 tablespoon of oil or ghee in a pan over medium heat.
– Add the paneer cubes and fry them until they turn golden brown on all sides. Remove the paneer from the pan and set aside.

3. Cook the Masala:
– In the same pan, add the remaining oil or ghee.
– Add cumin seeds and let them splutter.
– Add chopped onions and sauté until they turn golden brown.
– Add ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.
– Add chopped tomatoes, turmeric powder, red chili powder, and coriander powder. Cook until the tomatoes turn soft and the oil starts to separate.

4. Add the Spinach Puree:
– Pour in the spinach and mustard greens puree. Mix well with the masala.
– Add salt and garam masala powder. Let the mixture simmer for 5-10 minutes until the flavors meld together.

5. Add Paneer and Cream:
– Add the fried paneer cubes to the spinach mixture.
– If you prefer a creamier texture, add fresh cream at this stage. Mix well and let it simmer for a few more minutes.

6. Garnish and Serve:
– Garnish with fresh coriander leaves.
– Serve hot with naan, roti, or rice.
